Diabetes mellitus has been described as “one of the main threats to human health of the 21st century.”According to the most recent (2012) estimate from the American Diabetes Association, 29.1 million Americans live with diabetes.2 The percentage of Americans with diagnosed (or undiagnosed) diabetes continues to rise, and the number of people living with type 2 diabetes is likely to reach epidemic proportions, due in part to poor lifestyle choices such as the consumption of processed foods and poor nutrition habits placing an increasing population at risk.
